The Essential & Bandit Pâtisserie are helmed by Birmingham, AL-based Chefs Kristen Hall and Victor King. Essential offers all-day café-style dishes which pay homage to the region’s bounty. Located on the historic cobblestone streets of Morris Avenue in downtown Birmingham, the restaurant is housed in the newly renovated Founders Station development, which previously served as the city’s first drive-through bank.
King’s savory menu of small and large plates is inspired by what’s in season and sourced from local and regional purveyors. Hall’s passion for pastries and laminated dough shines through on the dessert menu, which features specialty items from the partners’ additional venture, Bandit Pâtisserie.
Drawing on Hall’s affinity for baking, Bandit Pâtisserie offers the best in seasonal flavors and laminated dough by utilizing signature French methods to create beautiful, technique-driven pastries that are sold online and through a pick-up window in the heart of their downtown Birmingham shop. Celebrating small moments and sweet treats, Bandit Patisserie’s staples include pies, croissants, cookies, and tartlets.
