Mizu’s translation to ‘water’ in Japanese. The restaurant is located on the rooftop of the newly built Hyatt Centric Hotel Charlotte SouthPark with views of of the Queen City. Inspired by the wood-fired Robata grills of Japan, Mizu offers live-fire cooking and wood-fired seafood, focusing on Southern ingredients and Asian-forward flavors. The kitchen is led by Executive Chef/IRHG veteran Michael Chanthavong.
The Menu: A seafood driven menu with Japanese influences, offerings are centered around Mizu’s custom open-flame Robata grill, a Japanese barbecue method that dates back thousands of years. Executive Chef Chanthavong applies live-fire cooking, creating a menu composed of chilled and raw dishes to begin, then moving into maki rolls, hot and sharable items, robata-grilled dishes, main entrees, and a selection of sides.
The menu showcases Fried Softshell Crab with Lemon Caper Aioli, Butter Lettuce; Pistachio-crusted Grouper with Sugar Snap Peas, Brown Butter, Eggplant; Robata-Grilled Chicken Cutlets, Drunken Pineapple; and more! Japanese-forward desserts, including a dairy-free Coconut Parfait, topped with Lychee Tapioca Pearls. Add a special libation of Japanese spirits; Suntory Toki Whiskey; Hearst Tower; Mizu Midori Sour.
