Costa d’Este Resort & Spa – Vero Beach, Florida

One such local treasure is the Costa d’Este Resort and Spa, a boutique hotel owned by Grammy Award Winner Gloria Estefan and her husband, Producer Emilio Estefan. The inspiration for the hotel, drawn from the chic environs of Miami and the Estefans’ Cuban roots, is visible in the design elements and cuisine. The decor is contemporary in neutral colors with a touch of understated elegance. Overlooking the beautiful white-sand shores of Vero Beach, this luxurious property has much to offer.

There are 94 beautifully-appointed rooms and suites, a full-service spa, a fitness center, elegant event spaces, an infinity-edge swimming pool with its adjacent Cabana Bar, and the signature restaurant Wave Kitchen and Bar. In addition, there is an onsite business center, meeting rooms, and a banquet room to suit the needs of a work-pleasure stay.

The hotel charges a small resort fee which covers resort, beach, and pool amenities: welcome libations upon arrival, bottled water, beachfront lounge chairs, poolside concierge services, and daily newspapers. You can even reserve Beach Bicycle Cruisers to discover the Treasure Coast.

WAVE KITCHEN & BAR The dining room features an open kitchen and fabulous bar. It’s spacious and airy with floor to ceiling windows with views of the Atlantic. Of special interest is the ‘circle’; a tall semi-circular, wood paneled enclosure offering semi-private dining space for groups up to 10 guests. The cuisine at Wave is outstanding – fresh locally sourced seafood and produce, as well as Cuban specialties.

For breakfast you can start your day with healthy selections or go for Cuban French Toast with Guava Jelly or Smoked Salmon Benedict. Dinner reigns supreme – I can attest to the following specialties: Paella a la Costa, teeming with seafood or Ropa Vieja, shredded beef slowly cooked in onions, peppers; Estefan Kitchen’s Homemade Cuban Creole Sauce; Cuban Style Churrasco Skirt Steak and the awesome Key West Pink Truffle Scampi over squid linguini. * I tried to snag the Creole sauce recipe to no avail.

POOLSIDE CABANA BAR & Grill Enjoy the ocean breezes while sipping on your favorite libations. They off a daily Happy Hour with special pricing on Appetizers, Draft Beer,House Wines and House Cocktails. Remember that you can have breakfast, lunch or dinner poolside as well.

C|SPA On the spa menu are massages, facials, body treatments, manicures, pedicures, and full-day spa packages for individuals or couples. The fitness center has Cybex resistance equipment, free weights, cardio equipment and new Peloton & Matrix machines. Imagine taking in the majestic sunrise while participating in yoga on the beach!
